Braai in Helensville, Auckland NZ

Hi Jan,

Did our own celebration of National Braai Day in NZ, Helensville, Auckland to be exact. Was great! Attached photos with some scotch steak fillets, mushrooms in garlic and blue cheese butter, just after the wors, lamb chops and chicken nibbles were done. Then finished off with some “toasties”. Had some pap en sous as well!. Castel Lager too expensive here, so have to make do with NZ Lager:-).

Great site and work with braai.com!

Cheers

This recipe was pioneered during the great Braai Tour of South Africa in 2011. It was Day 34 of the tour and all members of the touring party was understandably used to a very high level of braaing. Normal meat for normal people wasn’t cutting it anymore. For the first time in quite a while it was just the six members of the touring party, nobody else. We were in Baviaanskloof and sleeping in a cave; we had about 3 kilograms of rump steak between the six of us and the film crew wanted something special as this was also the last braai of a TV episode. I went with pan braaied steak flambe for starters (this recipe) and steak prego rolls for mains. After the episode aired there were quite a few emails asking for the recipe. Here it is.

The actual braai took place in the dark, and as we were filming during that for the TV show, no flashlight photography was possible.

Ingredients

Matured Rump steak (100 grams pp for starters, 200 – 300 grams pp for mains)

Olive Oil

Salt & Pepper

Klipdrift

Cream (optional)

Method

Pat salt and pepper into/onto both sides of the steak.

Place the pan over the flames. This recipe works very well as a starter as it is best prepared whilst the fire is still burning. Use an old pan, or a cast iron pan, or whatever pan you generally use on the fire.

Generously add some olive oil to the pan. You might even want to put the oil in the pan before putting the pan on the flames.

As soon as the oil is really really hot, place the steak in the pan. Take care not to splash some of the boiling hot oil on yourself. The pan can stay on the flames during this whole process.

Turn the meat after about 2 minutes and remove from the fire after about another 2 minutes (very thin steak shorter, very thick steak longer).

Add a generous dash of brandy to the pan, take the pan back to the flames and slightly tilt so that the brandy can catch fire.

Remove the pan from fire and let the meat rest for a few minutes.

Cut the steak into strips (in the pan, or on a cutting board) and return the meat to the pan, so that it can further absorb some of the sauces in the pan.

Serve as is, potentially grinding additional sea salt onto the meat if needed.

Additional Advice

Originally I served this recipe as is from the pan to everyone around the fire. If you are going to plate it, let the meat rest on a cutting board before you slice it up. Whilst the meat is resting add a dash of cream to the sauce in the pan, bring to boil and use that combined sauce (essentially consisting of olive oil, meat juice, salt & pepper & cream) on the plated steak strips.

You can obviously also just add cream to the sauce even when serving straight up from the pan.

Catch it every Friday at 17:30 with reruns on Saturdays at 13:00, Sundays at 07:00 and Tuesdays at 16:30. We realize that you might want to do some of the things that we did on the show yourself. As such we will post all the relevant info for each episode weekly, right here on www.braai.com.

Segment 1: East London and JeffreysBay

The Steve Biko heritage trail is best done with an expert guide. Talk to Velile at iMonti Tours and make sure you stop at ‘Man Buy and Braai’ in either East London or King Williams town to experience a real Chisa Nyama. You don’t need to do any shopping before going to Man Buy and Braai – it’s part butcher, part shebeen and part Braai restaurant. You can bed down at The Terrace (043-735-4348) for the evening. For the whole sad Steve Biko story, read this entry Helen Zille’s Facebook page.

Jeffreys Bay is undoubatly the surf capital of South Africa and as such we recommend visiting in July when the Billabong Pro is in full swing. For general info: www.jeffreysbaytourism.org.

Segment 2: Baviaanskloof

Baviaanskloof is paradise. We entered the valley from the Jeffreysbay side and it took us 8 hours of driving to get to the Grahamstown side. Our accommodation that evening was in a self-catering cave which is a part of the famous Makedaat Caves (044 923 1921, info@makkedaat.co.za). Take some cash and buy freshly baked farm bread, jam and ice (for your Klipdrift) from the farmhouse where you collect the keys.

Freddy Hirsch was responsible for liaising with all the local butcheries that provided us with meat.

Klipdrift.co.za is the official drink of any real man at a braai and made sure that we could always make ourselves at home, and keep our throats wet.

All of the clothes worn by me (Jan Braai) on the show can be purchased at Cape Union Mart, and is good quality for money for any traveller, or braaier.

It all started less than 48 hours ago when ‘Derick Watts & The Sunday Blues’ loaded their braaiday song onto YouTube. Now it has more than 20,000 views and counting. As we speak Johnny de Ridder who is one of South Africa’s top music producers (having worked with Fokofpolisiekar, Aking, Die Heuwels Fantasties, Jax Panic etc etc) is busy mixing a cleaned up mastered version of the song. The Mp3 will be released later today and will be available for free download right here on http://braai.com

In the meanwhile, here are some photos of the two guys who are ’Derick Watts & The Sunday Blues’ namely Gareth Allison and Nicholas Smal and the man behind National Braai Day, Jan Braai. These photos were shot yesterday in Cape Town and may be lifted from this website and reused. Please credit all photos to www.braai.com.
Cape Town – With less than three weeks to go until National Braai Day, a local comedy pop duo has posted an apt National Braai Day parody of Rebecca Black’s infamous viral video hit, Friday – adding a distinctly South African flavour. Nicholas Smal and Gareth Allison, also known as ‘Derick Watts & The Sunday Blues’, posted the video entitled Braaiday on Tuesday and it has been receiving overwhelming response from fans ever since – going viral on Facebook, Twitter, and other content sharing sites.

Smal had this to say about the video: “National Braai Day is about uniting the nation and getting all South Africans to unite around a braai for one day every year. We love the spirit of the good ‘ol South African braai. If this video will help unite our nation, I will sleep a happy man tonight.”

Says Gareth Allison, “South Africans love to braai. It’s in our blood! Why not combine our love of music with our love for braaing? It was kind of a no-brainer for us – we certainly didn’t expect the level of response that the video has got so far though.” National Braai Day’s head Jan Braai is delighted with the outcome of the song and the attention it has received. “We are excited about the support the song has received online so far. As South Africans, we never take ourselves too seriously and the song really captures the spirit of National Braai Day. It’s contributions by people like Nic and Gareth that will ultimately result in the success of this initiative in uniting a nation.” Find them on twitter: @janbraai, @nicsmal, @garethisatwit

The track was recorded in a bedroom as Smal says “the bedding provided the perfect cushioning for the sound, ensuring there were no echoes”. This past weekend Smal, Allison and a few of their mates lit a fire, had a braai and recorded the music video (which has now gone viral).

The release of this songs follows on the heals of the release of the chart topping National Braai Day Anthem by Die Heuwels Fantasites, JR, HHP and Soweto Gospel Choir. The track’s release is just in time for South Africa’s National Braai Day on 24 September 2011. For more information visit www.braai.com. Nic Smal is a Cape Town musician in two bands, Gravity Wins Again and Versus The Wolf, and works as an animator/designer at local firm Masters & Savant, as well an expert on male ballet. Gareth Allison is also part of Gravity Wins Again and is a freelance website designer and part-time cakeenthusiast. He is not a Taurus. Below follows the song that the parody is based on, ‘Friday’, by Rebecca Black; and below that follows the music video of the official National Braai Day anthem.
