Ingredients
FOR THE BURGER:
- about 500g beef fillet
- salt and pepper
- 4 hamburger rolls
- fresh romaine lettuce
- parmasan cheese shavings
FOR THE SAUCE:
- 2 garlic cloves
- 3 anchovy fillets
- 1 tsp capers (drained)
- ½ cup mayonnaise (creamy)
- 1 tsp mustard
- 1 tsp Worcestershire sauce
Method
- Light a big fire and while you wait for the wood to convert to coals through an ancient and very natural process, prepare, measure and arrange all of the ingredients for the sauce. Cut the steak in to 4 equal size medallions and season with salt and pepper.
- Make the sauce: Put the garlic, anchovies and capers in your pestle and mortar, food processor or stick blender and grind/blend into a smooth paste. Now add the mayonnaise, mustard and Worcestershire sauce. Mix well until everything is properly combined.
- Braai the steaks over very hot coals for 8 minutes in total until they are medium rare. Beef fillet has a lot of sides, so be sure to braai it on all its sides in the total time that you braai the steak
- Oil the sliced rolls and toast on the grid, taking care not to over-toast (burn) them.
- Assemble the burger: Roll, lettuce, steak, sauce, Parmesan, roll.
