COLESLAW WITH VINEGAR

Vinegar-based coleslaw is the classic side dish to braaied pork. So you, as a complete braaier, need to know this recipe. I prefer to use a mixture of red and green cabbage for a bit of colour on the plate

Ingredients

  • 3 tots red wine vinegar
  • 1 tot sugar
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp mustard
  • 1 small red cabbage (washed and finely sliced)
  • 1 small green cabbage (washed and finely sliced)
  • 2 carrots, grated
  • 4–6 spring onions (chopped

Method

  1. In a small mixing bowl, make the dressing by whisking together the vinegar, sugar, salt, pepper and mustard. You could also shake the ingredients together in a clean glass bottle with a lid.
  2. Put the sliced cabbages, carrots and spring onions in a large salad bowl. Pour the dressing all over the salad and toss to coat it well. Serve as a side dish to braai
