Fire Watermelon

Every once in a while, we all get the urge to try a recipe that is totally different from anything we've ever tasted.

Ingredients

What You Need:

  • 1 watermelon (you wil only use about a ¼ but cut up the rest to eat just like that)

For the Salsa:

  • 1 whole slice of watermelon (cut into cubes)
  • 1 teaspoon cayenne pepper
  • 2 tots sesame seeds (white, black or mixed)
  • fresh mint (or basil)roughly chopped

For the Feta Cheese Cream:

  • 100g feta cheese (1 wheel of feta)
  • 1 cup Greek yogurt
  • 1 tablespoon (15ml) olive oil
  • salt and pepper (to taste, the feta is already salty)

For the Vinaigrette:

  • 2 tots port
  • 2 tots olive oil
  • 2 tots red wine vinegar
  • fresh mint or basil for garnish
  • Sesame seeds for garnish

method

  1. For the feta cream: Use a food blender or stick blender and combine feta and yogurt. Blend until very smooth. Add olive oil and blend until incorporated and season with salt and pepper and place this mixture in the fridge
  2. Mix the port, olive oil and vinegar together in a jar or bowl and shake mix this well to form a vinaigrette
  3. Cut 1 slice of the watermelon into equal size small blocks of about 2 cm. Season the blocks with cayenne pepper, sesame seeds and fresh mint and keep aside in the fridge.
  4. Make sure your fire is super hot and preheat your grid over the hot coals until super hot. This step is very important to get the ultimate caramelization on the watermelon. Cut one thick slice of the watermelon and cut into 4 quarters. Braai the 4 watermelon slices once on each side for about 2 minutes. Remove from the grid and let this rest straight into the fridge.
  5. Plate your dish: Place the chopped cubed watermelon at the bottom, top with the braaied watermelon slice, round off with dollops of feta cheese cream and drizzle the port reduction around the dish. Garnish with extra mint and sesame seeds.
