Jan Braai | Flapjacks Recipe

WHAT YOU NEED

FOR THE FLAPJACKS

  • 1 cup cake flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1 egg
  • 1 cup milk
  • 1 tablespoon oil (plus extra for frying in the pan)

 

FOR THE TOPPING SAUCE

  • ½ cup Nutella hazelnut chocolate spread
  • 3 tablespoons milk

WHAT TO DO

  1. For the sauce: In a medium-sized bowl and using a spoon, mix the nutella and milk together. Initially it will appear separated, but continue mixing until it forms a smooth and easy to drizzle chocolate sauce. Set aside.
  2. Now we make the flapjacks! Mix the flour, sugar and baking powder together in a large mixing bowl.
  3. In another bowl, whisk the egg, add the milk and oil into that, and whisk well.
  4. Add the egg mixture to the bowl with flour and mix together. Do not over mix this, just until everything is combined and no more. 
  5. The easiest tool to measure batter for consistent and perfectly sized flapjacks is a ¼ cup-sized measuring cup. The ¼ cup-sized measuring cup holds just over 60 ml, and you’re looking for 50 ml of batter per flapjack, so fill it almost but not all the way to the top. 
  6. Add just enough oil to a fire proof pan pan to cover the bottom of it in a very thin layer. Heat  on medium heat on the fire. After 1 minute the pan will be hot. Scoop batter into the pan, making as many flapjacks at a time as will fit into your pan. 
  7. As soon as the flapjacks start to form bubbles on top, which will happen after about 1 minute, flip the flapjacks over with a spatula and cook for another 30 seconds on the other side. So the total cooking time is under 2 minutes.
  8. Build flapjack towers with layers of flapjacks, drizzled with nutella sauce inbetween, three flapjacks per serving.
